Foodie Photo Friday: Pumpkin


Halloween was last week and Thanksgiving is just around the corner. There are pumpkins everywhere! One of our favorite things to do as a family each year is to travel to our local farm and purchase a few pumpPumpkins_littlekins. We keep a few for display but cook the rest to make soups, bread, pie and add to pancakes and waffles. Lately, I have been adding a teaspoon to my coffee before I blend it. It’s my own healthy version of a pumpkin spice latte.

Pumpkin is loaded with antioxidants and very low calorie. It is an easy source for added vitamins and minerals. When my boys were smaller, I would add a little pumpkin puree to their macaroni and cheese. Some people roast the seeds but we haven’t done that yet because the boys say they look creepy (I agree).
